He isnt an actor but, we ALL know him...how about George A Romero? Hey even Stephen King acts in all his movies! SO, I think it would be weird to see GAR himself as a zombie or even acting in one of his movies.

He played a director at WGON with his future wife sitting next to him. You also get to see him flash across the screen wearing a scarf pushing a cart in Day. And in Land he provided the voice for one of the puppets in the puppet show. Not underminding here, but he was asked this once and he said he was getting too old to appear in his movies.
