My favs are The Terminator movies, Total Recall, True Lies, Last Action Hero, Twins, and Commando.

Predator is a no brainer. I'd also have to say terminator 2 as well. Aside from it being a kickass movie it also changed the game and what we came to expect that an action movie should be. Also, much like the matrix, it showed us things that we hadn't seen previously, and spawned countless copycats. And as we all know imitation is perhaps the greatest form of flattery.
